    1 package fresh spinach (the lazy part of me says get the triple washed so your effort is minimal)
    1 can small whole beets, drained and rinsed well, and cut in half (Don't use the pickled beets)
    1 cucumber, unpeeled, cut in chunks
    1 1/2 cups cherry or grape tomatoes, cut in half
    12 strawberries, sliced

    (note: fruit can be substitued, mandarin oranges, grapes, peaches, pears, any fruit you like can be subsituted)


Combine all ingredients in a large bowl.

Toss with Raspberry Mustard vinagrette (provided in another recipe but it's basically a vinagrette with balsamic vinegar, mustard and rapsberry jam and a touch of olive oil)

for protein - add on some grilled shrimp, chikcen breasts, turkey breast or pork tenderloin..
