Ingredients

3 cup Spaghetti Squash
1 cup Hunts diced tomatos w/basil garlic, oregano (by PJEROME72)
2 tbsp Extra Virgin Olive Oil
3 clove Garlic
0.5 cup Bell peppers (Green, Red, Yellow, Orange)
0.25 oz Costco Sun dried tomatos (by IRONORCHID)
3 tbsp chopped Shallots
2 grams Portabella Mushrooms
0.33 cup Colby and Monterey Jack Cheese shredded
0.25 cup Tomato Paste
4 serving Al Fresco Sweet Italian Chicken Sausage
4 cup Spinach, cooked
Directions
Cut Squash in half sprinkle with Salt & Pepper and put into a cold oven and turn on to 460. Cook for 45-50 minutes or until fork tender. Remove from oven and set aside. Reduce heat on oven to 400.
In large skillet
Saute garlic, shallots & bell peppers, with olive oil, all finely chopped for a few minutes. Add in sliced sausages. Saute approx. 5 minutes. Add in mushrooms, saute some more.
When sausages are just about done add in spinach once all is wilted add in tomatoes and tomato paste, salt & pepper to taste (or add whatever seasoning you may like) Simmer for 5 minutes.
Scrape out squash from shells and add to pan. Mix all together.
Spray an 8x8 baking dish with cooking spray and bake in a 400 degree oven for 40 minutes. Add cheese to the top for last 15 minutes.
