Great satisfying dinner!! Spicy, lowfat, quick and fun! Great satisfying dinner!! Spicy, lowfat, quick and fun!
Number of Servings: 2


    8 Ounces - Chicken Breast, no skin
    2 - Red Peppers, medium
    1 - Small Onion
    3/4 Cups - Red Kidney Beans
    1 - Small Avocado
    1 - Packet of Old El Paso Fajita Seasoning
    1 1/2 Cups - Cooked Brown Rice
    1/2 Cup - Kraft Shredded 2% Mexican Four


Prepare Brown Rice as instructed.

Chop peppers and onions to desired size, set aside.

In a large skillet, brown chicken then remove from heat and set aside.
In a large skillet, spray pan lightly with no calorie cooking spray and cook peppers, onions until tender.
Stir in chicken, fajita mix, kidney beans.
Let simmer for about 8-10 minutes.

In a large serving bowl, mix together brown rice with all cooked ingredients. Add in cheese and avocado and mix together.

Serves 2.
