    1 onion
    2 bell peppers
    4 tomatillos
    2 cans of diced tomatoes
    1/2 can chili peppers in adobo sauce
    1 clove garlic
    2 cups frozen corn
    3 cups tomato juice


Makes 10 one cup servings.

Cut onion into 6 wedges. Core and slice bell peppers. Roast onion and peppers at 400 degrees for 25 minutes.

Meanwhile, puree tomatillos, diced tomatoes, chili peppers and garlic in a food processor. Stir in corn and tomato juice. When onion and peppers are cool, chop and add to gazpacho.

Chill at least two hours and serve in well-chilled bowls.
