Ingredients

2 cups rice
1 cup mixed vegetables
4 Lg potatoes, halfed
1 tbsp salt
1 tbsp oil
1/4 cup onion, sliced thin
1 tsp cumin seeds
3 cinnamon sticks
1 tsp clove, whole
3 cardamom pods
6 peppercorns, black
1/4 cup tomato, chopped
1/4 cup of cilantro, chopped
1/2 tsp turmeric
2 tsp chili powder, level
1 tsp garam masala
1 tbsp ginger garlic paste
3 cups of water (give or take)
2 tsp ghee
Directions
Put oil in pressure cooker, add half of the sliced onion, add the cumin seeds, clove, cinnamon sticks, peppercorns, cardamom, and braise until onion is glassy. Add turmeric, chili powder, garam masala and giner garlic. Add a little water and mix. Add mixed veg, potato, tomato and cilantro. Add a little more water and mix. Add washed rice and then enough water for the pilaf to cook in the pressure cooker. Cook 15 minutes in pressure cooker.
Meanwhile, add rest of onion and add the ghee in a frying pan and braise onion until golden brown. Remove from heat. Preheat oven to 350 degree F.
Put Pilaf into a baking dish and add onion and ghee on top. Bake, covered, for about 30 minutes. Check at 20 minutes. Water should be gone and only oil bubbling on the sides.
Makes about 10 one cup servings.
