Introduction

Number of Servings: 12

Ingredients

    4 lbs Corned beef, brisket
    10 Baby Red Potatoes
    1 medium diced Onion
    4 cup Water
    4 large Carrots, peeled and cut
    1/2 a head of chopped cabbage
    1/2 a can of beer

Tips

Beer is not needed, if you prefer to leave it out. I've used both dark and regular ale.


Directions

Put carrots, red potatoes, and cut up onion into the bottom of a slow cooker / crockpot, pour the water over the vegetables, and place the brisket on top of the vegetables. Pour half of a beer over the brisket (found it isn't needed, if you want to save calories). Sprinkle on the spices from the packet, cover, and set the cooker on Low for 8 hours.

An hour before serving, stir in the cabbage and cook for 1 more hour.
