Introduction

Here's a Middle Eastern Style dish that I gave a Tuscan twist to.

(I topped it with a sprinkle of the Urban Accents Bayou Barbeque Seasoning, which contains Sweet paprika, salt, sugar, Jamaican allspice, Cayenne red pepper, nutmeg, Tellicherry black pepper, garlic powder, sweet cinnamon, and thyme).

Ingredients

    You'll Need:
    1 head of califlower- cut into florets (Discard leaves and as much stem as possible)
    1 8oz block of low fat cream cheese
    2 Tablespoons of 1% milk
    4 oz of Parmesan Cheese
    1 Tablespoom Olive Oil
    OPTIONAL
    1 Tablespoon of a Middle Eastern Style Seasoning (I use Urban Accents)

Directions

TOOLS:
1 8 inch baking dish
1 food processor (Blender will work in a pinch)
1 Microwaveable bowl (Use a Deep Bowl)
3 Paper Towels

How To:
1: Pre-heat your oven to 450 degrees on bake
2: Place Califlower into microwavable bowl, fill with water. Place paper towels on the bowl and lightly press them onto the califlower, wetting the paper towels. This will help to steam the veggies. Microwave for 12 minutes.
3: While the califlower cooks, add the Oil and 2 oz. of the parmesan cheese to the baking dish and lightly tip the dish, spreading the contents across the bottom of the dish. Set aside.
4: After the microwave stops, drain califlower, keeping about 1 tablespoon of water in the bowl.
5: place the cream cheese, milk and half of the califlower to the food processor and blend for about 1 minute. Then add more califlower and the remaining water and continue to blend until smooth. (You may have to unstick some califlower from the bottom of the blades. Only do this when the machine is off.)
6: When smooth enough, add mixture to the baking dish. Make sure that you try to keep the surface of the mixture even, but do not mix with the oil or cheese.
7: Sprinkle the remaining cheese atop the mixture (Optional-add the seasoning as well)
8: Bake for 20 minutes. When finished set aside for 5 minutes and then serve warm.

    This was delicious!!! It tasted like a restaurant side dish, but even better! I would definitely have this again. And it is a good way to have cauliflower when you really want something completely unhealthy-it tastes like you are, but compared to how it tastes, it is pretty healthy!!! I loved it - 7/1/08
