Ingredients

    4 serving 1 Med. Green Bell Pepper
    2 serving Walmart Traditional Rotisserie Chicken (1/6 chicken)
    1 can Kirkland Artichoke Hearts marinated in oil
    1 package (10 oz) yields Spinach, frozen
    6 oz Cream Cheese
    0.5 cup Parmesan Cheese, grated
    1.5 cup, shredded Mozzarella Cheese, whole milk
    0.25 cup Sour Cream
    0.25 cup Mayonnaise, regular (mayo)
    2 clove Garlic

Directions

Preheat oven to 400°. On a large, rimmed baking sheet, place bell peppers cut side-up and drizzle with olive oil, then season with salt and pepper. In a large bowl, add chicken, artichoke hearts, spinach, cream cheese, ½ cup mozzarella, Parmesan, sour cream, mayo, and garlic. Season with more salt and pepper and mix until well combined. Divide chicken mixture between pepper halves, top with remaining mozzarella, and bake until cheese is melty and peppers are tender, about 25 minutes. Garnish with parsley and serve.
