Ingredients

32 oz Chicken Breast Tenders
1/2 cup tapioca flour
1 large egg
spices to taste
2 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
Tips
Only cook these right before serving them. The tapioca flour crisps nicely, but if it's left to sit, it gets mushy.
Directions
In a large skillet, melt the coconut oil. Mix together the tapioca flour and spices (I use garlic flakes, salt, pepper, and Lawrey's Seasoning Salt) in a large, flat container (pie plates work well). Lightly beat the egg in a separate bowl.
Dip each tender into the egg, then into the flour. Roll it to coat all sides, and place gently into the pan. Cook three minutes to a side - they should be browned, crisp, and if you test one it should be cooked through with NO PINK.
Serve with a salad for a delicious and healthy comfort meal that's quick and tastes naughty!
