Introduction

Ingredients

1 10oz can of Chicken
3 Med. Bell Pepper, any color, chopped
2 medium Onions, chopped
2 clove Garlic, grated or diced
1/2 cup Cheddar Jack cheese
10 medium flour tortillas
1cup canned black Beans, rinsed
1 cup Spinach, fresh
1 tbsp Extra Virgin Olive Oil
Directions
Turn oven on to 400.
Heat oil on medium and cook onion and bell peppers for about 10 minutes. Then add grated garlic, mix well, then add beans and chicken, breaking up the chicken pieces in the process. Add taco seasoning and cook for 3-5 minutes. Turn off heat.
Pam spray a baking sheet.
Cut tortillas in half and warm lightly in microwave so they are soft and pliable.
Put a spoonful of meat mixture along the long side of the tortilla. Roll it up, leading with the long side. Use toothpick if it doesn't want to stay rolled up. Place on cookie sheet, seam side down. repeat untill all tortillas are filled. Spray rolled tortillas with Pam and bake for 10 minutes. Turn and cook 10 more minutes or until crispy.
Serve with sour cream, salsa, or Pico de gillo.
