Introduction

This is a great tasting, very colorful salad that keeps in the refrigerator for several days. This is a great tasting, very colorful salad that keeps in the refrigerator for several days.

Ingredients

    2 cups chilled, cooked brown rice
    1 15-ounce can black beans, rinsed and drained
    1 cup frozen whole kernel corn, cooked and drained
    1/2 cup diced red sweet peppers
    1/3 cup thinly sliced green onioon
    1/3 cup snipped fresh cilantro
    1/3 cup salsa
    1/4 cup fat-free mayonnaise
    1/2 teaspoon ground cumin

Directions

Combine rice, beans, corn, sweet pepper, green onino, and cilantro in a large bowl; toss well. Combine salsa, mayonnaise and cumin. Add to rice4 mixture; mix well. Serve at room temperature or chilled.
Makes 6 side-dish servings.
