Ingredients

    3 small very ripe bananas
    1/4 cup applesauce
    1/4 cup canola oil
    1/2 cup sugar
    2 tbsp molasses
    2 cups whole wheat pastry flour
    3/4 tsp baking soda
    1 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/2 tsp salt

Directions

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.
In a large mixing bowl, mash the bananas well. Add the sugar, applesauce, oil, and molasses, and whisk to incorporate.
Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined.
Transfer the batter to prepared pan and bake for 45-40 minutes. The top should be lightly browned and a knife inserted through the center should come out clean.
Remove from oven and invert onto a cooling rack; flip the bread right side up and let cool.

    This recipe has a great flavor. I used splenda rather than sugar. Next time, I will add chopped almonds. Easy to make; will make it again. - 5/16/09

    I made this recipe substituting Splenda Blend for the regular sugar. It turned out wonderful. I'll definitely make it again. - 12/21/08
