    4 ears sweet corn, kernels cut off
    1/3 c masa harina
    2 Tb melted butter
    1/2 ts salt
    12 oz shrimp, shelled and diced
    1 tp canola oil
    1 tts cumin
    1 ts chili powder
    1 red pepper, roasted, peeled, de-seeded
    1 small can green chili peppers
    1 c shredded jack cheese
    3 Tb minced shallots
    1 c diced pineapple
    juice of 1/2 a lime
    1 minced jalapenos-use to taste
    2 Tb minced cilantro
    1 1/2 ts minced shallots soaked in water 30 minutes and drained
    1/2 ts cumin


Puree 1/2 the corn in food processer. Add masa, salt and butter and mix, stir in corn, reserve.

Heat oil on medium high, add garlic and shallots and cook a few minutes. Add cumin and chili powder and stir 1-2 minutes. Add shrimp and stir untill just cooked.

Butter a baking dish and spread half corn mixture in bottom, layer in chili and roasted peppers, shrimp, half the cheese then corn mix and top with the rest of the cheese. Bake on 350 30 minutes untill golden and crusty.

For salsa mix pineapple, lime, jalapenos, shallots, cumin and cilantro. Serve with the pie.
