Ingredients

0.75 cup Arrow Root starch/flour (by CSIENK)
3 tbsp Bob's Red Mill Coconut Flour (by BABYHUNT)
.25 tsp Salt
1 large Egg, fresh, whole, raw
1 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
1 or 2 clove Garlic
Tips
Can be served cold and even refrigerated and reheated but takes best fresh and warm.
Directions
1. combine arrowroot starch, coconut flour, and salt in a medium bowl and mix to combine
2.In a separate bowl, whisk eggs with coconut milk, then add the wet mixture to the dry mixture until well incorporated. Allow to sit on the counter top for 5-10 minutes for batter to thicken
3. Heat a 8 inch pan over medium low heat and add a lilttle bit of oil to it, then spoon about 1/3 cup of batter into the pan and cook on each side for 2 to 3 minutes
4. Sprinkle with fresh or roasted garlic and drizzle with olive oil. Serve warm
