    1 c bulgur
    1 1/4 c broth, vegetable or chicken
    1 c water
    3 green onions, sliced
    3 small cloves garlic, put thru garlic press
    1/2 c dried apricots, chopped
    1/4 c chopped walnuts
    2 c chick peas, drained and rinsed
    1/2 c broth
    1/4 c fresh parsley, finely chopped
    1 tsp curry powder
    dash black pepper


Bring water and 1 1/4 c broth to boil in small sauce pan. Stir in bulgur, reduce heat and cover, simmer 12 - 15 minutes until liquid is absorbed.
Remove pan from heat.
Meanwhile, heat olive oil in small skillet. Add onions, stir 1 minute, add walnuts, stir 1 minute, add garlic, stir 1 minute, add curry powder and stir 1 minute. Add apricots and remaining 1/2 c broth. Stir 2 minutes. Add bulgur and chick peas,
heat through. Stir in parsley and pepper.
Makes 8 servings, approx 1 cup.
