Serve alone or over brown rice or couscous. Serve alone or over brown rice or couscous.

    1 1/4 lb deveined shrimp
    olive oil spray
    1 Tblsp minced garlic
    2 tsp dried dill
    2 tsp dried parsley
    1 tsp red pepper flakes (optional)
    salt & pepper to taste
    5 lemon wedges


Prepare couscous according to package directions using chicken broth, but no oil, butter or salt. Set aside and keep warm. (nutritional info for couscous was not calculated with the shrimp)

Bring about 1 quart of water to boil. Cook shrimp in water until pink, approximately 3 to 5 minutes. Strain shrimp and place in a bowl. Spritz with 1 to 2 sprays of olive oil - just enough for seasonings to cling to the shrimp. Add seasonings, except for lemon wedges, and toss to coat evenly. Adjust seasonings as desired.

Serve over couscous with lemon wedges on the side.
