My men have a hard time deciding between this and fried squash. My men have a hard time deciding between this and fried squash.
Number of Servings: 4


    2 cups(5 or 6 medium) squash-prefer a mix of yellow and zucchini
    .5 tbsp extra virgin olive oil
    1 cup sliced onions
    2 tsp. chicken, beef, or other bouillion(you could use chicken broth)
    2 cups water
    1 tbsp black pepper


Drizzle the olive oil in the bottom of the pan at medium high heat. Heat while you slice your vegetables. This can be made in a wok; this amount works in a large skillet. Add sliced yellow and zucchini squash
and onions. Turn heat down to medium. Mix your bouillon and water together and carefully pour into your pan. Bring the mixture to a boil and turn down further. Put a lid on and simmer at least 10 minutes.

Makes 4 one cup servings.
