Tips

A sharper cheese would be a nice touch. Cooking the radishes in the chicken broth ahead of time makes them tender and gives them a wonderful flavor. Very good potato sub.

Directions

I like to peel my radishes, but it’s not necessary. Slice radishes thinly. The slicing blade on my food processor works perfectly for this. Place radishes in pan with 2 cups of chicken broth and bring to a low boil. Cover and cook for 30 minutes.

While radishes cook, I cube my ham. Spread ham evenly in bottom of greased 9 x 13 baking dish. When radishes are done, using a slotted spoon remove from broth and spread evenly over ham. Preheat oven to 350 degrees (F).

Measure remaining broth in radish pan and adjust as needed to equal one cup. (Mine worked out perfectly to one cup) To broth, add cream cheese, sour, cream, and heavy cream, and seasonings, and cook over medium heat stirring constantly until well combined and cream cheese is melted. Add 2 cups of grated cheese and mix well. I also added 2 oz of brie for a richer flavor. Once all cheese is melted, pour cheese sauce over radish and ham evenly. Carefully stir lightly to mix sauce in with ham and radishes. Smooth top of dish, sprinkle with paprika if using, then top with remaining 1/2 cup cheese and Parmesan, if using. Bake for 15 – 20 minutes. Remove from oven, let sit for five minutes, then serve. Enjoy!
