Tips
Broken into pieces it looks decadent with the coconut. Unless you tell them no one would guess that this is sugar free.
Directions
I start by mixing a batch of stevia and erythritol together for this recipe and other things. In a food processor I combined 1 1/3 cup erythritol with 2/3 cup stevia. That is to make a powder out of granulated product.
Prepare a cookie sheet with parchment paper.
For this recipe I used about half a cup of the stevia/erythritol blend and saved the rest for later.
Melt 4 ounces of bakers unsweetened chocolate - stir frequently
add 1 tablespoon extra-virgin coconut oil. When the chocolate and coconut oil are completely melted stir in the sweetener.
Pour the mixture onto the parchment paper and spread thin. Sprinkle the flaked coconut over top and refrigerate until solid.
Break up into pieces and store in covered container in the refrigerator.
This is just something to take care of a chocolate craving when you are lowering your carbs. Dark chocolate is healthy as it has many antioxidants.
It tastes like it has many more calories than what it does.
