    3 Cups whole wheat flour
    2 Large Eggs
    1/2 cup Egg Substitute
    1/2 Cup Canola oil
    1/2 Cup Apple Sauce
    2/3 Cup Brown Sugar unpacked
    1/3 Cup Splenda
    2 1/2 tsp baking powder
    2 1/2 tsp baking soda
    2 1/2 tsp salt
    3 Cups Carrots Grated


Makes 24 Muffins

1. Preheat oven to 400 degrees

2. Mix the 3 cups of grated carrots with eggs, egg substitute, oil, and apple sauce. In a medium bowl.

3. In a large bowl mix all the dry ingredients in a large bowl.

4. Mix wet ingredients into the bowl with the dry ingredients. Mix well, will be thick but will also look lumpy from the carrots.

5. Fill muffins tins about 2/3 full. Bake in the over for 20 minutes
