Introduction

Good summer meal or for lunch. Good summer meal or for lunch.
Number of Servings: 4

Ingredients

    1/2 Cup Orzo
    1 pint grape or cherry tomatoes OR a few sundried tomatoes sliced up
    12 pitted kalamata olives (I use black)
    3 ounces reduced fat feta cheese
    2 cups cucumber slices
    1/4 cup low fat italian dressing
    4 cups prewashed spinach leaves

Directions

Cook orzo according to package directions. Drain in a fine mesh strainer and rinse under cold running water.

Halve the tomatoes. Coarsely chop the red onion and the olives. Cut the feta into small pieces.

Combine the tomatoes, cucumber slices, feta cheese, onions, olives and orzo in a salad bowl. Add the dressing and toss gently until coated.

Serve over 1 cup of fresh spinach.
