Ingredients

    10 serving Lynden Farms Hashbrowns (by EROSE1311)
    24 oz Kirkland Perdue Chicken Breast Boneless Skinless
    3 cup, pieces or slices Mushrooms, fresh
    .5 cup Leeks
    1 cup, shredded Cheddar Cheese
    2 tsp Paprika
    2 tsp Poultry seasoning
    3 tsp Dried Thyme (by ARCTIC.ORCA)
    .75 cup Dairy, Milk - Whole - 1 cup
    .75 cup Imagine Organic Free Range Low Sodium Chicken Broth (by ERICREDUS)
    1 cup Peas and carrots, frozen

Directions

preheat oven to 325 degrees
Chop up mushrooms and divide into 2 equal portions
chop chicken into bite size pieces
cook in sauce pan over medium heat with leeks and 1.5 cups of mushrooms using just a little spray oil

combine remaining mushrooms with milk and chicken broth in a blender and puree the mushrooms.

after chicken is cooked add mixture to a 9x13 pan,
add 1 cup of frozen peas and carrots
cover with the mushroom puree and then sprinkle the cheese over the top

top with hashbrowns

Cook for 35 to 40 min (to evaporate some of the sauce) then broil on high for 5 min to crisp the hash browns
