I came up with this recipe when I didn't know what to make and worked with what I had in the fridge. I came up with this recipe when I didn't know what to make and worked with what I had in the fridge.

    8 eggs
    4 oz shredded part skim mozzarella
    1 bell pepper diced - whatever color you want
    1 C cherry or grape tomatoes
    1 C chopped chicken breast or leftover chicken
    1 tsp cumin
    t tsp chili powder
    1 T chopped cilantro


Preheat oven to 400 degrees.

Cook diced chicken in a cast iron skillet sprayed lightly with non-stick cooking spray. Cook until no longer pink. About halfway through cooking, add bell pepper. When chicken is cooked through and bell pepper is slightly tender. Add tomatoes.

Whisk together eggs, mozzarella, cumin and chili powder. Pour over the top of the chicken mixture. Cook until nearly set, pulling back the sides of the cooked mixture to allow uncooked mixture to run to the bottom of the pan. Top with chopped cilantro.

Bake at 400degrees 10 minutes or until set.

Serve with whole wheat rolls and a salad.

  • I actually really liked it! I did do some changes, i added little krokkettes and i didnt have any peppers so i just didnt use them. It turned out really well though! - 7/14/08
