Introduction

The veggies get blended in, and the taste is quite mild under the sweetness of the coconut cream! The veggies get blended in, and the taste is quite mild under the sweetness of the coconut cream!
Number of Servings: 6

Ingredients

    1 can (approx 14 oz) Coconut Coconut Cream (I like Trader Joe's)
    1 tbsp Butter, salted
    1.5 cup, cubes Eggplant, fresh
    1.5 cup, sliced Zucchini
    1 dash Salt

Directions

Heat skillet with butter. Add eggplant, zucchini, and salt. Cook until vegetables are soft and falling apart, stirring occasionally. Add water if needed to keep from burning
Add can of coconut cream and stir till solids are melted. Can let cook more if needed, or if blender can handle hot foods, transfer to blender.
Blend until smooth and creamy.
Great on top of chicken, sweet potato, or spaghetti squash

Serving Size: makes approximately 4 cups
