    3 medium (4-1/8" long) Scallions, raw
    4 large Egg, fresh, whole, raw
    4 serving Smithfield Bacon, Thick Cut (1 Slice)
    2 tbsp Basil
    1.5 cup Kraft Finely Shredded Sharp Cheddar Cheese
    .5 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    4 tsp Bacon grease
    1 dash Pepper, black
    1 serving Himalayan Pink Salt - Trader Joe's 1/8 tsp (by FRESHAIRE1)
    2 cup slices Squash, summer, scallop, raw
    1 tbsp Fresh Garlic Minced (by PRNCSSPTCHWRK)


Any of you adventurous types out there I tried this recipe with Ramps instead of scallions and it was good ( I was out of scallions and the ramps were growing in my yard)


Preheat oven to 360
cook bacon till slightly crisp- set aside grease chop bacon
in a medium mixing bowl beat eggs.
add squash, scallions, garlic, bacon, basil, and 1 cup of the cheddar cheese. Salt and pepper to taste. Mix well.

In a medium casserole dish add bacon grease. spread evenly on the bottom and sides. then add almond flour and tap the sides of the casserole till it is lightly covered with the flour.

Pour the squash mixture in the casserole and top with remaining cheese.
Bake for 40-45 minutes till golden

Serving Size: makes 6 servings
