Number of Servings: 20


    2 cups whole wheat flour (soft wheat if possible)
    1 1/2 cups yellow cornmeal
    1/3 cup sugar
    2 Tbs baking powder
    3/4 tsp salt
    2 eggs
    2 cups buttermilk (or substitute low fat milk)
    1/3 cup oil


Preheat oven to 350. Mix wet and dry ingredients separately, then combine and mix until dry ingredients are just moistened. Do not overmix. Pour into 9x12 pan and bake for 20-25 minutes or until a toothpick inserted into the middle of the pan comes out clean. Makes 20 squares of cornbread.
