    1 3/4 cups sugar
    1/4 teaspoon salt
    1 cup cake flour
    12 egg whites (room temperature)
    1/3 cup warm water
    1 teaspoon extract or your choice (I like 1/2 coconut and 1/2 rum)
    1 1/2 teaspoons cream of tartar


Preheat oven to 350. Process sugar in a food processor until superfine. Sift Half the sugar into a bowl with the flour and salt. Whip egg whites, water, extract, and cream or tartar 2 minutes, then add remaning sugar slowly. Continue whipping until medium peaks form. Fold in the flour mixure gently, a little at a time until just incorporated. Spoon into an ungreased tube pan and bake 35-40 min or until a skewer inserted into the center comes out clean. Cool completely in pan, upside-down, so it does not fall.
