Ingredients

2 cups Better'n Eggs (Egg Substitute)
4 oz Skim Milk
1 cup Kraft Fat Free Shredded Cheese
1 cup Fresh Mushrooms, sliced
1/2 cup Tomatoes, sliced
1 tbsp Onion Powder
1 tbsp Garlic Powder
1 dash Black Pepper
1 dash Salt
1 tbsp Grated Parmesan Cheese
Non-stick Cooking Spray
Directions
Saute fresh mushrooms until just browned.

In a bowl, combine egg substitute, milk, shredded cheese, tomatoes, spices and sauted mushrooms. Mix well.

Coat the bottom and sides of a casserole dish with the non-stick cooking spray. Pour egg mixture in casserole dish.

Bake for 30 minutes. Carefully remove the dish from the oven and evenly cover with the grated parmesan cheese. Return it to the oven and bake for an additional 20-25 minutes (until the top is puffed and firm).

Allow to cool slightly before cutting. Finish off with favorite optional ingredients or omelette toppers.
