Number of Servings: 6


    1/2 head medium Cauliflower, raw chopped fine
    1/2 cup Couscous
    1.5 cup Chickpeas
    3 ounces cooked Chicken Breast cut into bite sized pieces
    1/2 cup, pitted, chopped Dates
    1/2 cup, ground Almonds
    1;2 tsp Cinnamon
    1/2 tsp Cumin
    1/2 tsp ground corriander
    1/2 tsp cinnamon
    1 tbsp Extra Virgin Olive Oil
    1 clove Garlic, minced
    1 can Diced Tomatoes
    1.5 cup Peas, frozen


Cook couscous according to package directions. Brown the garlic in the olive oil. Add cauliflower and cooked couscous and cook for 5 minutes. Stir in remaining ingredients and cook another 5 minutes. Season to taste with salt and pepper.

Serving Size: Makes 4 servings
