Introduction

Ingredients

    6 lasagna noodles uncooked
    18 oz. ground turkey breast
    1 T garlic salt
    1 t Italian seasoning
    1/2 t crushed red pepper
    1/2 t dried minced onion
    1 t fennel seeds
    1 1/2 c + 1/2 c + 2 c, divided low-fat marinara sauce
    2 oz. + 1 oz. low-fat (3g of fat or less per ounce mozzarella cheese finely grated

Directions

Preheat the oven to 375 f. Prepare the lasagna noodles accoriding to the package directions. When they're finished cooking, draing and run cold water over them. Then, on a large cutting board or clean work surface, lay the noodles flat.

Meanwhile, in a large bowl, mix the turkey with the spices until well combined. Place a large frying pan over medium-high heat. Transfer the mixture into the preheated pan, breaking the turkey into large chunks with a wooden spoon. Cook until no longer pink. Mix in 1 1/2 cups of marinara sauce and remove the pan from the heat.

Spread 1/2 cup of the sauce in the bottom of a medium casserole dish and set it aside.

To assemble the rollups, divide the meat mixture evenly among the noodles and spread it across two thirds of the length of each noodle. Sprinkle 2 ounces of the cheese on top of the meat. Then roll the noodles, making sure theat the filling remains inside. Place the rolls sideways in the casserole dish, so they don't touch. Top them with the remaining sauce and cheese.

Bake covered for 20 minutes, then uncovered for 5 more minutes. Remove from oven and allow to set for 5 minutes. Makes 6 rollups
