Introduction

Delicious for hot summer days! Delicious for hot summer days!
Number of Servings: 4

Ingredients

    360 grams fresh Pineapple
    260 grams Cucumber (peeled and seeded)
    1 Jalapeno or other pepper, seeds removed
    3 tablespoons Fresh cilantro
    3 cloves Garlic
    1 stalk Green Onion
    30 grams slivered almonds
    12 oz Almond Milk, Unsweetened Plain
    2 tablespoons Extra Virgin Olive Oil
    1/2 teaspoons Salt

Directions

Combine pineapple, cucumber, oil, jalapeño and salt in a blender and purée until smooth.
Add green onions, half of nuts and half of cilantro and purée just until combined (or to preferred consistency).
Transfer soup to a container, cover and chill for at least 2 hours. Ladle soup into cups or bowls and garnish with remaining nuts and cilantro.

Serving Size: Makes approximately 4 one-cup servings.
