Ingredients

    1.75 lbs Red Potato
    Green Peppers, 0.5 cup, chopped
    1/2 onion, diced

    Vinaigrette:
    Olive Oil, .33 cup
    Vinegar, .33 cup
    Granulated Sugar, 3 tsp
    Oregano, ground, .5 tsp
    Paprika, .5 tsp
    *Grey Poupon Dijon Mustard, 1 tsp

Directions

place potatoes in sauce pan with salted water enough to cover. bring to boil. reduce heat and simmer 15-20 mintes of until just tender. drain potatoes and cut into quarters/bite size pieces.

mix together ingredients for vinaigrette. toss with potatoes, chopped onion and pepper. cover and chill for 4-24 hours.
