    1 pkg. strawberry jell-o, sugar free
    1 c. fat free cool whip
    1 c. strawberries (fresh or frozen)
    2 c. diced rhubarb
    1 graham cracker pie crust
    1 c. water


Slice rhubarb into small (1/2 in.) pieces. Boil with one cup water. Once boiling, add jell-o and stir till dissolved. Cool. Add strawberries and chill till mixture begins to thicken. Stir in 1 c. cool whip. Spoon into pie crust. Refrigerate for 2 hours or until firm.
