    1 large onion, chopped
    8 cups low sodium chicken broth
    4 tablespoons no salt added tomato paste
    1/2 cup red lentils
    pinch cayenne pepper, to taste
    1 teaspoon ground coriander
    1 15 or 16 oz. can no salt added butter beans
    1 15 or 16 oz. can no salt added navy beans
    1/4 cup chopped fresh mint leaves or parsley


Combine the onion, broth, tomato paste, lentils and spices in a large pot. Bring to a boil. Reduce the heat and simmer for 30 or 45 minutes until the lentils are soft. Mash or blend with a hand blender if desired. Stir in the remaining ingredients and cook 5 or 10 minutes more. Makes 6 servings, about 1 and 1/3 cups each.
