Introduction

Ingredients

    2.5 cup Lentils
    1.0 cup, chopped Onions, raw
    1.0 clove Garlic
    3.0 cup Vegetable Broth
    3.0 oz chipotle peppers in Adobo sauce
    14.0 serving puebo lindo corn tortillas
    1/4 cup Cilantro chopped

Directions

Chop onion and sautee until translucent. Chop garlic and add to onion. Cook for about a minute. Add broth and lentils (rinsed) Bring to a boil then reduce heat and simmer until lentils are soft. Add chipotle and adobo sauce. (Chop the peppers), colantro,salt and pepper. Add 2 tsp to a tortilla and roll. Place taquitos in a baking dish. Lightly coat them with olive oil and bake for 20 minutes or until golden. Serve with guac or salsa
