Introduction

Surprisingly good and vegan! I like to roll it into little balls and freeze them. Surprisingly good and vegan! I like to roll it into little balls and freeze them.

Ingredients

    0.50 tsp Vanilla Extract
    1 can Chickpeas (garbanzo beans)
    3 tbsp Maple Syrup
    3 tbsp Skippy Creamy Peanut Butter
    3 tbsp *Nestle Mini Chocolate Chips
    1 tbsp Chia Seeds, ground fine

Tips

NOTE: Removing the skins will reduce the amount of dietary fiber, but I was unable to find exact nutrition information for skinless chickpeas.


Directions

Drain the chickpeas.
Optional: slip the outer skins off the chickpeas - this will result in a smoother textured dough.
Place everything except chocolate chips in food processor and process until smooth.
Add chocolate chips.

Chill for at least an hour.

Eat as-is, or roll in tablespoon sized balls and chill (or even better, freeze).

Serving Size: Makes 24 teaspoon-size cookie dough balls (about 1 cup), 1 ball per serving
