Introduction

Lean and gluten free meatloaf- no red meat . Easy way to have extra veggies too - and use up the fresh zucchini from the garden! Lean and gluten free meatloaf- no red meat . Easy way to have extra veggies too - and use up the fresh zucchini from the garden!

Ingredients

    500 grams Zucchini shredded
    30 gram GF Oatmeal
    4 tbsp Ketchup, Heinz
    2 large Egg, fresh, whole, raw
    454 gram(s) Chicken - Extra Lean Ground chicken
    Herbs and spices to taste

Directions

Shred zucchini in food processor. Add remaining ingredients (except for ketchup) and mix well. Transfer to a grease loaf pan. Cover with tin foil. Cook for 60 min at 375F. Uncover. Add ketchup to cover the meatloaf. Broil for 5 minutes. Serving Size: 1/4 of the loaf
