Ingredients

    2 lbs lean ground beef (substitute ground turkey as desired)
    1 cup chopped celery
    1 cup chopped onion
    1 cup chopped green pepper
    3 Tbsp Olive Oil
    I can Tomato soup
    1 large can stewed or diced tomatos
    1 can tomato paste
    2 cups Mozarella cheese

    Suggested spices added to taste:
    chili powder
    chipotle pepper
    cayenne peppers
    salt and pepper

Directions

Brown meat, onion, garlic, green pepper, and celery in olive oil. Meanwhile cook noodles until they are halfway done, drain. Add tomato products to meat mixture and heat through. Pour meat and tomato mixture over noodles in an oven safe casserole dish. Add cheese to top. Bake in 350 degree oven until cheese is melted and brown.
