Turmeric Citrus Quinoa

1 cup quinoa, dry
2 cup (8 fl oz) Water
1 1tsp Coconut Oil
1 tbsp Lemon juice
1 tbsp Lemon Rind, Grated (6g)
1.5 tsp Turmeric, ground
.25 tsp Salt
.25 cup (not packed) Raisins
.25 cup cashew nuts, raw, chopped
1 stalk Green Onion, chopped
1 tbsp Fresh Mint Leaves, chopped
GRAIN : bulgur, rice, buckwheat, wheat berries
CITRUS : lime, tamarind
DRIED FRUIT : apricots, figs, cranberries
HERB : cilantro, parsley, basil
NUT : almonds, peanuts, walnuts, hazelnuts, sunflower seeds
ALLIUM : garlic, shallot, red onion, chives
PROTEIN : add tofu, tempeh, seitan
Allow the quinoa to cool until it's warm to the touch, then stir in the remaining ingredients.
Taste and adjust salt as needed.
Serve warm or cold.
Garnish with extra raisins, cashews, mint, or green onion.
Serving Size: Makes about 4 half-cup servings
