Introduction
We used to make this with ground hamburger and it was almost 400 calories per serving. By using ground turkey, we saved 100 calories AND I discovered that ground turkey is less expensive, too ----- a plus when feeding hubby and 3 growing boys. Ingredients
-
1.5 lb ground turkey
3 10oz bags mixed veggies
2 small cans tomato sauce
1 can stewed tomatos (with juice)
garlic to taste
salt to taste
pepper to taste
Directions
Place turkey, veggies, tomato sauce, and seasonings in soup pot and cook until turkey is done. Mix with a wooden spoon while cooking so turkey breaks up into tiny kernels.
Water will cook out of the veggies. If it isn't as soupy as you like, add water and heat until desired temp.
If using canned veggies, I use the juice from the can and usually don't need water.
If you follow the recipe, it should make 10-12 1 cup servings.
However, this soup has a way of "growing". We eye-ball it ---- toss in some meat, and then any veggies that look good. You can alter the flavor and texture of the soup by using different veggies. The broccoli/cauliflour mix is good, as well as zucchini and squash.
