    8 oz ground turkey breast
    1/4 C whole wheat bread crumbs
    1 egg
    3/4 t black pepper
    1/2 t Italian seasoning
    6 T parmesan cheese, shredded
    1 onion, finely diced
    2 cloves garlic, minced
    2 zucchini, halved lengthwise and sliced
    1 summer squash, halved lengthwise and sliced
    1 16 oz can Italian style diced tomatos
    1 16 oz can crushed tomatos
    1/4 C fresh basil, chopped


In large bowl, combine ground turkey, bread crumbs, egg, 1/2 t pepper, Italian seasoning, and 4 T of cheese. Form into balls the size of walnuts.

Spray large non-stick skillet with cooking spray and heat over medium heat. Working in batches, cook meatballs for 15 minutes, or until browned all over. Remove to bowl, leaving drippings in pan.

In same skillet, warm drippings over medium high heat. Add onion and garlic and cook for 5 minutes, or until onion is tender. Stir in zucchini, squash, diced tomatos (with juice), crushed tomatos, remaining pepper and cheese and the meat balls. Heat to boiling. Reduce heat to low, cover and cook for 20 minutes. Stir in chopped basil.

Serve with whole wheat fettucchini.
