Ingredients

    Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2"
    Yellow Peppers (bell peppers), 2 pepper, large (3-3/4" long, 3" dia)
    Onions, raw, 1 medium (2-1/2" dia)
    Zucchini, baby, 2 large
    Spinach, frozen, .75 package (10 oz) yields
    Mushrooms, fresh, .5 cup, pieces or slices
    Egg, fresh, 1 large
    Ground beef, extra lean, 18 oz
    Salt, 1.5 tsp
    Pepper, black, 1 tsp
    *Spaghetti/Marinara Sauce (tomato sauce), .5 cup
    Goat Cheese, Soft, 2 oz

Directions

Halve peppers lengthwise
Brown beef and drain
Grate zucchini
Defrost and squeeze dry spinach
Mix all ingredients together except peppers, marinara and cheese
Put filling in each pepper half
Top with large spoonful of marinara
Sprinkle with goat cheese
Bake 350 degrees for 1 hour
