Ingredients

4 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)
9 large Egg white, fresh
4 tbsp Extra Virgin Olive Oil
6 cups water, salted
Tips
You can add cinnamon or other spices or herbs at this point or wait until you make your meal with the crepe.
Since i love peanut butter and banana sandwiches I use these crepes as tortillas. They are a bit fragile for sandwiches.
They roll really well
Directions
Make oatmeal using water and oats listed here. you want the mixture thin.
Whip egg whites until frothy or stiff, your choice.
Add egg whites to thin, cooked oatmeal, mixing well.
Preheat 10" skillet, low heat, using tsp of oil for each crepe.
Cook each side until they are done. May have to flip a couple of times until all wet crepe mixture has been cooked.
Serving Size: 7 - 10" crepes
