    12 oz pork tenderloin
    2 tblsp butter
    1/2 heavy cream or whipping cream
    4 mushrooms sliced
    2 tblsps brandy or Calvados or apple juice


Butterfly the tenderloin so that it is an even thickness. In a large skillet, melt butter over medium high heat. Add pork. Cook until juices run clear. Turn only once. Transfer meat to platter.

For sauce, add cream, mushrooms and brandy to the skillet, and scape up any brown bits. Bring to boil. Reduce heat, let it simmer and reduce for a few minutes. Serve sauce over meat.
