    1 cup fine ricotta cheese (250 mL)
    1 cup plain yogurt (250 mL)
    2 eggs
    1 tsp grated lemon rind (5 mL)
    1 tsp vanilla (5 mL)
    3 tbsp granulated sugar (45 mL)
    1 tbsp Imperial Margarine, melted (15 mL)
    1 cup all-purpose flour (250 mL)
    1 tsp baking powder (5 mL)
    1/2 tsp baking soda (2 mL)
    pinch salt
    1 pint strawberries washed & hulled (500 mL)
    2 tsp lemon juice (10 mL)
    4 tbsp honey (60 mL)


Mix together the ricotta cheese yogurt, eggs, lemon rind, vanilla, sugar and melted margarine. Sift together the flour, baking powder, baking soda and salt. Add the dry ingredients into the cheese mixture and stir until just combined.

Heat a griddle on medium heat. When the griddle is hot, spray the surface with a non-stick cooking spray, and spoon out 3 tablespoons of batter for each pancake. Spread out the batter into 3” circles and cook until both sides are golden brown.

For the strawberry sauce, wash and hull the berries. Dice the strawberries into small cubes and place in a bowl. Add the lemon juice and honey. Serve on top of the hot pancakes.
