Ingredients

    3 large Poblano Peppers, Raw
    12 oz. mild Italian Sausage, pork, raw
    1.5 tsp Gourmet Garden Cilantro Stir-In Paste
    1/2 cup Cheddar, Sharp, shredded
    1 Large Egg

Tips

2 net carbs per half stuffed pepper

Chorizo sausage is good in this too, but the nutritional info will change.


Directions

Preheat oven to 350 degrees F.

Cut the peppers in half lengthwise, remove ribs and seeds if desired, and set aside on a baking sheet.

Remove sausage from casings and place in a mixing bowl. Add in the cilantro, cheese, and egg. Combine using your hands until evenly mixed.

Stuff each pepper half with the mixture until all peppers are stuffed.

Bake for 30 minutes until meat is cooked through and cheese has melted.

Store any leftovers in an air tight container in the fridge for up to 3 days.
