Ingredients

    Cabbage, fresh, 1 head, large, sliced in long strips
    1 large onion, sliced thin (2 if you prefer)
    2-3 large red tomatoes, diced large
    1 tbsp red or cayenne pepper, or to taste
    12 oz cured salt pork.

Directions

In a dutch oven, cook the salt pork until done. Do not drain. Place all vegetables in the pot. Put the lid on the pot. Simmer on low heat for two hours without touching it. After two hours, stir gently, add the cayenne pepper and let simmer another 30 minutes. Serve with your favorite toasted bread or cornbread.
