Introduction
This is a cheap and easy recipe and is one of those "use up stuff lying around" recipes that turned out to be a pretty good one so I thought I'd share it with ya'll. I used it like a taco meat substitute. Ingredients

2 c. Black beans (I used one bag of dried beans, prepared)
1 TBS margerine
1 can sweet yellow corn
3 c. uncooked white rice
12 mini sweet peppers or 2 yellow bell peppers
1 large videllia onion
1 clove of minced garlic
2 Tbsp cayenne pepper (or to your taste but it takes a lot to give this large recipe a kick)
1 Tbsp ground cumin

Directions
either use canned black beans or make them from dried beans ahead of time.
prepare the rice in water as directed on pkg.
while the rice is going, chop onion and peppers into nice size slices (however you like them).
In a large skillet saute onions, peppers and minced garlic in margerine and heat and drain corn and beans (I suppose you could do this in the same skillet after your onions are done, I'm a glutton for punishment and whipped out extra pots and pans lol)
once everything is hot and done mix it all together in a large bowl. add in seasonings and stir well.
makes 10 large servings.
I like to use this with warm homemade tortillas or if I'm not being as healthy I stuff this in sopapillas and both ways I serve with a little shredded lettuce, diced tomatoe, sharp cheddar (grated) and fat free sour cream out on the table and everyone constructs as they want. Those things are not included in the nutritional info.
