Ingredients

3 fruit (2-1/2" dia) Japanese Persimmons
1.5 tsp Baking Soda
2 large Egg white, fresh
1.5 cup Granulated Sugar
.75 cup Olive Oil
1.5 cup, packed Raisins
2.625 cup Flour - Gold medal all purpose flour
1.5 tsp Salt
1.5 tsp Cinnamon, ground
1.5 tsp Nutmeg, ground
.3 tsp Cloves, ground
Tips
You can use dates instead of raisins, if you prefer.
Directions
In small bowl, combine persimmons and baking soda. Set aside.
In large bowl, lightly whisk egg whites, then add sugar, oil, and raisins. Set aside.
In medium bowl, combine flour, salt, and spices.
Add flour mixture to raisin mixture alternately with persimmon mixture. Mix only until blended.
Spread batter evenly on medium-sized buttered and floured cookie sheet.
Bake at 350°F for 22 minutes, or until toothpick comes out clean.
