Introduction

I love chili, but not all the salt and fat. This is low is salt and fat. And it really is good! I love chili, but not all the salt and fat. This is low is salt and fat. And it really is good!
Number of Servings: 12

Ingredients

    1 lb Ground turkey
    1 lb pinto beans
    1 3/4 cups diced tomatoes or one can(no salt added)
    1 env (approx 3 tsp)Lawry's or McCormick taco/chili seasoning mix
    4 cups water
    1/2 to 1 medium onion chopped
    1 or 2 cloves garlic minced
    1 small can tomato paste
    1 Tbs olive oil

Directions

this makes about 12 1/2 cup servings.
Saute onions and garlic in 1 tbs olive oil until clear. Add pinto beans and water. Cook until just done.Saute tomatoes and simmer for about 10 minutes. Add tomato paste and stir until blended well, then add to pinto beans. Cook for about 30 minutes and then add the turkey.(I add the turkey raw because it absorbs the flavors as it cooks). Simmer for another 20-30 minutes. I like to let this simmer for a long time and add water or low sodium beef broth as needed.
